Vegan and Gluten Free Cabbage Soup

Hello and welcome everyone to another episode of Cooking with Fey!

Today I will share with you my favorite cabbage soup recipe. These last few days it’s been snowing here in the Pacific Northwest, which is unheard of for us so early in the year. So I thought I would make some comfort food that is both heart healthy and tasty to make it through this bizarre weather.

For this recipe you need:

  • 1/2 cabbage, chopped
  • 2 large carrots, chopped
  • 1 onion, diced
  • 1 cup of quinoa
  • 1 & 1/2 cups of green beans, chopped
  • 2 cups of mushrooms, sliced in half

Now, just toss everything into a large stock pot with some water and spices and cook for 40-45 minutes. It’s that easy!

Organic and Vegetarian Grocery Haul for the Week of August 27th!

Hello and welcome friends to another edition of Cooking with Fey! I just returned from the grocery store with some delicious food to eat in the coming week. This haul is a little smaller than most, because I still have a ton of food from when I went to the store last week. (Pro Tip: Never go grocery shopping when hungry, you buy WAY too much food. Or at least I do.)
