Vegan and Gluten Free Cabbage Soup

Hello and welcome everyone to another episode of Cooking with Fey!

Today I will share with you my favorite cabbage soup recipe. These last few days it’s been snowing here in the Pacific Northwest, which is unheard of for us so early in the year. So I thought I would make some comfort food that is both heart healthy and tasty to make it through this bizarre weather.

For this recipe you need:

  • 1/2 cabbage, chopped
  • 2 large carrots, chopped
  • 1 onion, diced
  • 1 cup of quinoa
  • 1 & 1/2 cups of green beans, chopped
  • 2 cups of mushrooms, sliced in half

Now, just toss everything into a large stock pot with some water and spices and cook for 40-45 minutes. It’s that easy!

Vegan and Gluten Free 5 Ingredient Protein Breakfast Balls

Hello and welcome everyone to another episode of Cooking with Fey!

Today I will show you how to make some delicious and easy high protein breakfast balls. This tasty breakfast is high in both protein and healthy fats, while being vegan and gluten free. Foods such as this are great for those of us with heart conditions, and this recipe is low enough in sugar for diabetics to enjoy.

Those of us with heart conditions can benefit from the healthy fats in this recipe because these fats may help lower our blood cholesterol. Having high cholesterol is bad for many reasons, but one of the main ones is that high cholesterol can cause a buildup of plaque in your arteries- which could lead to nasty conditions like heart attacks or stroke. To prevent this, make sure your diet is full of monounsaturated fats instead of the harmful saturated and trans fats. Remember it this way, fats from plants or nuts are generally good for you, while fats from animals or chemically processed things from a lab are worse for your heart.

Protein is great to help muscles (like your heart) heal and repair. So be sure you are getting enough of this vital macro-nutrient in your diet. If you have questions about how much protein you should be eating in a day, just message me and I would be more than happy to help.

Additionally, this recipe is low enough in sugar to be a good choice for diabetics as well.

To make this recipe yourself at home, you will need the following ingredients:

  • 3/4 cup vegan protein powder
  • 1/2 cup nut butter
  • 2 Tbsp honey (or maple syrup or agave)
  • 2 Tbsp flaked or shredded coconut (feel free to toast the coconut if you’d like)
  • 2 Tbsp Hemp hearts or diced nuts

If you’d like to make this recipe into balls like I did, simply mix these ingredients together and shape the mixture into balls with your hands. These yummy treats will keep in an air tight container in the refrigerator all week for a delicious breakfast on the go.

Grocery Haul for the Week of September 17th, 2017

Hello and welcome everyone to another grocery haul video!

I was pretty darn hungry when I got out of the gym today, so I dropped by the store and picked up some yummy things to make for dinner tonight. Upon filming this video I realized that most of the items I purchased are carb heavy foods, so I had a good chuckle while making this video for you. Luckily, I have plenty of vegetables in the fridge to mix with this odd assortment.

Vegan Rice Pudding with Only Four (4) Ingredients

Hello and welcome everyone to another edition of Cooking with Fey!

Today I wanted to show you all how to add a healthy twist to one of my favorite comfort foods- rice pudding. This version is vegan friendly and uses only four ingredients, so it is ridiculously quick and easy to make.

For this recipe you will need:

  • 1 & 1/2 cups of coconut milk
  • 1 & 1/2 cups of leftover cooked rice
  • 1 Tbsp. of cinnamon
  • 1 Tbsp. of honey (agave or maple syrup can be used instead)

Some optional ingredients are:

  • 1 tsp. of vanilla
  • 1-2 star anise pods
  • 2-3 Tbsp. of coconut flakes

To make this recipe:

  1. Place all ingredients in a pot and bring to a simmer.
  2. Simmer for 5-10 minutes.
  3. Cover and let sit for 5 minutes.
  4. Enjoy!

This recipe is really that easy to make. Homemade rice pudding can be a great alternative to sweet treats such as Nutty Bars, ice cream, or candy. Depending on how you make it, rice pudding has less calories and fat than dairy-based sweet treats, and rice pudding contains around 4 grams of protein per 1/2 cup serving. Beat that Nutty Bars!

Vegan and Organic Orange Sunsets Juicing Recipe

Hello and welcome everyone to another edition of Cooking with Fey! Today I will share with you my Orange Sunsets juicing recipe.

For this quick and easy recipe you will need:

  • 1 handful of organic spinach
  • 1/2 organic cucumber
  • 1 inch of organic ginger
  • 2 organic juicing carrots

Simply turn on your juicer and insert the ingredients one at a time until everything has been juiced. Now you are finished and ready to enjoy your masterpiece.

Feel free to make this recipe your own by adding additional fruits or vegetables to suit your tastes.

Cooking Basics 101: Gluten Free and Organic Tricolor Quinoa!

Hello and welcome everyone to another episode of Cooking with Fey! Today I will show you how to make some delicious tricolor quinoa. Quinoa is gluten free and full of delicious vitamins and minerals, so it is a perfect addition to any diet.

For this recipe you will need:

  • 1 cup of organic quinoa
  • 2 cups of filtered water

Simply place these ingredients into a cooking pot and bring to a boil. Once it reaches a boil, reduce the heat and let it simmer for 10-15 minutes.

And you’re done! It’s that easy to make.

Homemade Quinoa and Coconut Milk Porridge (Vegan)

Hello and welcome everyone to another episode of Cooking with Fey! Today we are going to make some vegan quinoa porridge that tastes great and is good for you.

For this recipe the only two ingredients you need are:

  • 1/2 cup of quinoa
  • 3/4 cup coconut milk

I also added:

  • 1 tsp. cinnamon
  • 1 diced apple
  • 1/3 cup diced pecans
