Vegan and Gluten Free Cabbage Soup

Hello and welcome everyone to another episode of Cooking with Fey!

Today I will share with you my favorite cabbage soup recipe. These last few days it’s been snowing here in the Pacific Northwest, which is unheard of for us so early in the year. So I thought I would make some comfort food that is both heart healthy and tasty to make it through this bizarre weather.

For this recipe you need:

  • 1/2 cabbage, chopped
  • 2 large carrots, chopped
  • 1 onion, diced
  • 1 cup of quinoa
  • 1 & 1/2 cups of green beans, chopped
  • 2 cups of mushrooms, sliced in half

Now, just toss everything into a large stock pot with some water and spices and cook for 40-45 minutes. It’s that easy!

Vegan and Organic Orange Sunsets Juicing Recipe

Hello and welcome everyone to another edition of Cooking with Fey! Today I will share with you my Orange Sunsets juicing recipe.

Sunset, Poppy, Backlight

For this quick and easy recipe you will need:

  • 1 handful of organic spinach
  • 1/2 organic cucumber
  • 1 inch of organic ginger
  • 2 organic juicing carrots

Simply turn on your juicer and insert the ingredients one at a time until everything has been juiced. Now you are finished and ready to enjoy your masterpiece.

Feel free to make this recipe your own by adding additional fruits or vegetables to suit your tastes.

Homemade Quinoa and Coconut Milk Porridge (Vegan)

Hello and welcome everyone to another episode of Cooking with Fey! Today we are going to make some vegan quinoa porridge that tastes great and is good for you.

For this recipe the only two ingredients you need are:

  • 1/2 cup of quinoa
  • 3/4 cup coconut milk

I also added:

  • 1 tsp. cinnamon
  • 1 diced apple
  • 1/3 cup diced pecans

Homemade Vegetarian Curry with Rice

Hello and welcome everyone to another episode of Cooking with Fey! Today we will be making vegan (or vegetarian) curry with rice. If you’d like to follow along at home, please read the ingredient list below to see what you’ll need.

Ingredients:

  • 1 & 1/2 Tbsp Oil (I used Grapeseed oil, but you can use any kind you like)
  • 1 yellow onion, diced
  • 2 large carrots, diced
  • 1 cup lentils
  • 3 & 1/2 cups of water or broth (I used water to keep it vegan, but feel free to use veggie or chicken broth)
  • 1/2 cup coconut milk

Spices Used:

  • 1/2 tsp turmeric
  • 1 Tbsp curry powder
  • 1 tsp ginger
  • Salt and Pepper to taste

Directions:

  1. Place the oil, onion, and carrots in a medium cooking pot and cook until soft.
  2. Add the lentils, spices and water (or broth). Mix well.
  3. Bring the pot to a boil. Then cover and reduce to a simmer and cook for 25 minutes.
  4. Stir in the coconut milk and enjoy!

How to Start a Basic MACRO Diet

You may be thinking, “What exactly is a MACRO diet, and how do I start this?”

Basically, the MACRO diet means looking at foods in terms of their protein, carbohydrate, and fat content, rather than by simply counting calories. There is a little more math involved with this diet, but the dividends you will reap are well worth the initial pain in the backside.

The main things to remember are:

  • 1 gram of protein equals 4 calories.
  • 1 gram of carbohydrates equals 4 calories.
  • 1 gram of fat equals 9 calories.

 

So this means if you have an egg, for example, the MACRO details would look like this:

  • 1 large egg = 71 calories
    • 6g of protein (6 g X 4 = 24 calories)
    • 0.6g of carbs (0.6 g X 4 = 2.4 calories)
    • 5g of fat (5 g X 9 = 45 calories)
      • Obviously there is some rounding here since those numbers equal 71.4 calories, but don’t let that throw you off. I promise this stuff works!

Taking the first step to starting a MARCO diet may be scary, but keeping a food journal really takes a lot of the uncertainty out of it. What I did to get started was just write down the main foods I eat in a week (and their MACRO contents), so I now have a handy list of my favorite meals and how much they are.

To get started, just write down everything you eat in a day (along with the MACRO numbers). Do this for an entire week to see what you are eating and how that breaks down into each of the three categories.

Then check back next time when we dig a little deeper into what to do with these MACRO numbers!

How did I my blog start…
My blog was inspired after a four year journey with atrial fibrillation. The first year was the absolute worst- I had been training for my very first marathon when this all started. So, needless to say, my life was completely turned upside down. I went from running 8 miles a day, to wheezing and gasping for breath after walking 60 feet. Running had been my life, and I suddenly found myself with dozens of dietary restrictions and without the activity I loved most in life.

But fret not, in the second year I started trying to reclaim my joy, and began taking a more active interest in my health. The rest, is history!

So I’d like this site to be an outlet for me to share what I’ve learned these past years about living a healthy lifestyle, diet, cooking, and fitness.

The blogger community has been so wonderfully supportive and positive about my young site. I’ve received such great feedback that I constantly feel so blessed to be a part of this community.

Let’s see, my top two tips for bloggers….
Tip #1: Be consistent. Have you ever found an amazing YouTube channel or blog and been excited about each and every new post they publish? Well, your audience feels that way about your blog! Don’t leave people hanging by sporadically publishing posts. Get on a schedule and stick with it. This will also make life easier for you, because then you can start to plan your posts in advance and ideas start popping up as your brain remembers that you are getting closer to your designated blogging day.

Tip #2: Stick with it! With every new blog there is a period where you may find yourself posting all this great content, but no one has discovered you yet. Don’t fret, things will change, but sometimes it just takes time. Just keep doing what you have been- consistently posting great content. People will eventually start discovering how awesome you are and following you. It’s just a process- but don’t worry, I believe in you!
